Moroccan Spinach Salad: Traditional Moroccan Starter

A nice spinach salad (Bakkoula / Khoubiza) Moroccan style! This recipe is served as a starter with good homemade bread. This dish known for its greenery, it is very rich and nutritious.

Moroccan spinach salad is refreshing, tasty, and super easy to make. Follow the step by step recipe for a delightful outcome. 

What you will need :

  • 2 bunches of spinach leaves.
  • 1 bunch of parsley
  • 1 bunch of coriander
  • 4 cloves of garlic
  • 12 cl Water
  • 4 tbsp olive oil
  • 2 tsp Paprika
  • 1 Spice of Espelette pepper
  • 1 lemon juice
  • 1/2 candied lemon
  • A few purple or green olives

 

Preparation

Cook the spinach for 15 to 20 minutes. Remove them from the heat and drain them. 

Wash, sort and mince the spinach. In a steamer, place the minced garlic, herbs and spinach

Mix the candied lemon, garlic and herbs and place the mixture in a pot over low heat.

Add the spices and olive oil and cook while stirring for 5 minutes. Add the spinach and continue cooking over low heat until the water has completely evaporated from the spinach

Arrange the spinach in serving dishes and decorate them with purple olives and candied lemon peel
